Lindera Cherry Blossom Vinegar

Flavor Profile: Medium-high acidity, low sweetness
Tasting Notes: Think cherry pie; floral, yeasty, earthy and jammy with a good blend between fresh cherry flavor and preserved.
Kitchen Pairings: Great substitute for a traditional red or rosé wine vinegar; salad dressings, marinades and mignonettes benefit especially from using it.
Bar Pairings: Very good pairing to Gin, Vodka, and floral cordials such as St. Germain. Similar acidity to a lemon; so use proportionally.

Our Cherry Blossom vinegar offers a flavorful swap for a more traditional rosé vinegar

Cherry blossoms are a beautiful, ephemeral aspect of springtime. They also possess a unique and robust, nutty flavor. However, on their own, they don’t much taste like their namesake cherries.

To correct for that, we begin the brewing process a year prior, using cherries from Quaker Valley Farm, as well as wild sour cherries from our own property we forage here in Delaplane we begin making a cherry wine that will ferment over the course of a year. Then, in the following cherry blossom season, we begin taking the blossoms and using them almost like hops: to finish the vinegar. When paired together the flavor is actually enhanced and the cherry comes through more brilliantly than simply as a cherry vinegar, as well as bringing a nutty, earthy quality that makes the overall flavor profile reminiscent of cherry pie!
